Sorry to see your car in such a mess. I don't think it is worth the effort to fix it. There is so much damage. Your best bet is to part it and sell it out on eBay. The insurance company won't help you with liability... They will simply say..."too bad." But, you could get a judgement against him... Even if he has no assets, you could garnish his wages untill your needs are met. As for injury, that is gonna creep up on you. Trust me, you may not feel it now.. but it won't be long. It would be foolish on your part not to persue a case against this turd. However, it is unfortunate that you don't cary Med Pay or UM. Minimum liability is a joke.
