Good Friggin Meatballs
None of the measurements are written in stone, so feel free to adjust a bit to your taste.
100% Italian Recipe
1.5 lbs 80% lean ground beef
2 large eggs
1/4 cup heavy cream
1/2>2/3 cup fresh bread crumbs
1/4 cup fresh grated parmesan/romano
3 cloves(chopped) garlic
Large pinch fresh chopped cilantro
Large pinch of minced fresh basil
1 Tblspn oregano
1 tspn salt
Fresh cracked black pepper to taste
Adjust recipe to compensate for over wetness...BUT DO NOT ADD MORE BREAD...add cheese or more ground beef. If it's a bit too dry, add a bit more cream...try to stay away from another egg.
Fresh bread crumbs=day old bread in your cuisinart.
Combine & roll into palm-sized balls...wet your hands every other ball to keep from sticking. Place on parchment paper in 400 degree oven until brown(about 10 minutes or less). Once they're brown on the outside, give them a simmer in your favorite marinara for about 30 minutes.
Fucked Up American Style
Add 1/2 cup shredded mozzarella/cheddar and 3 Tblspn minced onion. Ground red pepper to taste(1/4 tspn).
Substitute the chopped garlic with 1 tspn granulated garlic, omit the cilantro and basil/oregano.
Variations to the American style:
Chopped roasted peppers
Chopped jalapenos
Chopped pepperoni
Chopped grilled onions
You can also roll the meatballs in Italian-style dry bread crumbs then deep-fry them before you simmer in marinara...I know...it sounds very fattening...but it's extremely good!!!

The secret to great meatbals...in any recipe...is the use of fresh breadcrumbs. Dry crumbs tend to suck all the moisture outta your balls...not good...the fresh crumbs make your balls tender & juicey...
