Four Cheese Stuffed Shells with Vodka Sauce
Vodka Sauce
- 1/2 Cup of Butter
- 1 Cup of Chopped Onion
- 1 Cup of Vodka
- 2 Cans of Crushed Tomatoes
- 1/2 Cup of Chopped Fresh Parsley
- 1 Tablespoon of Dried Basil
- 1 Teaspoon of Dried Oregano
- 2 Cups of Table Cream
In a large pot on medium heat, saute onions in butter until soft.
Add your favorite Vodka and cook for 10 minutes.
Add crushed tomatoes, parsley, basil and oregano. Cook on low/medium heat for 30 minutes.
Add cream and cook for another 30 minutes.

- 1 Cup of Fat Free Cottage Cheese
- 1 Cup of Ricotta
- 1/2 Cup of Parmesan
- 1/2 Cup of Romano
- 1 Egg (beaten)
- 2 Cloves of Garlic (Crushed)
- 1 Teaspoon of Italian Seasoning
- 1 Cup of Cooked Spinach
- Salt and Pepper
- 20 to 25 Jumbo Pasta Shells
Cook shells as per directions on the packaging
In a large bowl, mix the cheeses, egg, garlic, spinach and seasonings.
Stuff the cooked shells with the filling and place them in a baking dish lined with pasta sauce. I also used a little bit of vegetable oil so the shells don't' stick. Fill the dish and cover the shells with more sauce. The dish on the right has already been covered with sauce.
Cover dish and bake for 40 minutes on 350 degrees.
I made Garlic Toast too...
- 1 Cup of Butter
- 2 Teaspoons of Extra Virgin Olive Oil
- 3 Cloves of Garlic (crushed)
- 1 Teaspoon of Oregano
- Salt and Pepper
- Mozzarella Cheese
- 1 Baguette
In a bowl, mix butter, oil, garlic and seasonings. Spread over slices of bread.
Top with mozzarella cheese and back for 15 minutes at 350 degrees.
Enjoy!
