Carnitas Recipe Done..

From: Huntington Beach, CA -> Ashburn, VA -> Raleigh, NC -> Walnut Creek, CA
Carnitas Recipe Done..

So I cooked 12 lbs of carnitas for friends yesterday. I did it 2 different ways:

Batch #1:
Boiled in
1/2 Water
1/2 Orange Juice
about half a cup of a seasoning I whipped together, very similiar to taco seasoning
1 full chopped onion
2 cloves of garlic





#2
1/2 Water
1/2 Pepsi
a bbq seasoning I made a few years back




Bring the water to a slight boil and keep it there for 2.5-3 hours. Pull it out when the meat basically falls apart



Mix it around so it's no longer big chunks like I did up above. I then sprinkled a little Seasoned Salt on top of them.


I had the oven preheated to 425. I put it in there for 45 minutes and pulled it out every 10 to mix the meat around to make sure it all gets crisp (don't leave it in to long to prevent it from drying out)

Hmmm I need to visit the west coast seems like most people I know who live/visit often know how to make spanish food of some sort.

NOT true... Spanish food is excellent when prepared properly. Especially their desserts. I only know of one good Spanish restaurant around here, but there are TONS of crappy Mexican restaurants. It's the same back home in PR, so I'm sure that influences my opinion.
Then again, it's not like I'm in Cali or Texas

Yeah...never had carnitas or fish tacos before. Not enough Messicans here yet(suprising though).

It sounds basically like a variation of pulled-pork...just boiled instead of slow-roasted. Like Mexican BBQ

Good spanish food reminds me of Sicilian food...lots of seafood, fish, tomatoes & garlic. The great thing about Spanish food is that they basically invented the appetizer as we know it...it's called tappas.

Quaint little place between AdMo and Dupont called Churreria Madrid. Looks like a cheap place, but the food is great, the wines are good, prices aren't bad, and the service is horrid.
Then again I've not been to the two you mention so yours may be better. I know Taberna del Alabardero is probably a little too fancy for my tastes/wallet.

I've used Coke syrup on pork/ham several times. I use it with ground ginger snaps and honey mustard on my Christmas Hams.

Next time try this on your ham--I swear it is one of the best things ever. I used Coke until I found this.

1/2 cup of OJ--no pulp
2tb of butter (melted)
2tb of A1

Baste the ham every hour. You have to cover it at approx 2-3 hours or it will burn. I bake it at 325 for 4-5 hours.


CL--The carnitas look great. I will try them this week for sure.

For some reason...I have never liked the taste of cooked OJ. I love Tropicana and drink it regularly...but cooked...I can't get it past my lips. Even the pasteurized OJ makes me hurl. I never understood why lemons can cook so well and oranges could not.

cooking brats with beer is the best of all

cook your brats first in beer over the stove, i like to use killians irish red beer, cook them all the way then grill them on the bbq
