I know nothing of boats, but would it make more sense to have a larger propeller than that. Seems like it would be like having tiny tires on a high HP car. I have seen many boats with LS motors, but never an outboard one.

Props work mainly in the Pitch of the blade. The higher the pitch the greater the speed the less hole shot. The lower the pitch the greater the hole shot the less top speed. Having a motor powerful enough for a higher pitch blade will give you good out of the hole power and great top end. I run a 11 and a 13 pitch on my skiboat. It has a 350 in it. With that pitch prop i have successfully pulled 12 slalom skiers out of the water (which is no easy feat) but i top out at around 47(with the 11) to 54 (with the 13) But it gets there in no time at all. I can take my modified jetski to the boats top end by about 200 feet but then the jetski walks past it on its way to 85.
Usually hurts quite a bit but it usually gives those on shore watching a nice aerial show followed by a body tumbling across the water then making a huge splash in what usually looks like certain death from shore.

Or on my jetski you can go from Dry to soaking wet in a matter of seconds at 80+

Nothing like flying off while trying to show off...I know exactly what you're talking about. Last summer, an unnamed genius turned too quick while going 40+ and flew off and hit their leg on the handlebars and cut it open pretty bad.
