The 3.8 GT is the basis. From there, if you want pure performance, there's the R-Spec. If you want the performance plus the nice things, there's the 3.8 Track.
If the R-Spec was merely a dressed up version of the 3.8 GT, then I would agree with you. But it has all the performance stuff.

I think having a track-dedicated version a-la R-Spec is a good idea, I just don't want Hyundai to go the Porsche route and charge more money for less content. If the R-Spec doesn't have any of the luxury features of the 3.8 Track I would expect it to be less expensive as well....

^ they charge more for the exclusivity, not less content (although there are extra costs with removing stuff from a standard vehicle). A such, Hyundai could very well do the same thing.

In 2010, the 2.0T R-Spec cost less than the Premium by $500 and the Track by $3,000 while offering all the performance items of the Track, without the amenities of the Premium.
So it is actually more for less. The Brembo calipers alone almost more than justify the pricing.
The 3.8 R-Spec pricing will follow a similar pattern.

How is it more form than function when the R-Spec comes with the Brembos, track tuned suspension, etc. without the un-race-like stuff such as Bluetooth, cruise control?

I think you should take the silver pieces and have them finished in a glose white like your car appears to be.
That'd break it all up AND be different. I don't like the plain black more than the silver, personally. The silver at least makes the interior less dour.
So gloss black or gloss white!

i'd rather keep the silver than paint it white...
i've seen pictures of the white too.. it just looks like a big blob of white in the middle
