My car is dropped about 1.5", will this size rub? The 18" version of this wheel comes with a 45 offset, but I would cost about $5-600 more, and I don't really want 18's either.

From members here, that size could very well rub in the back if you have a full load in the car. IMO, 40's stick out too much.. They come out directly under the fender which is why they could rub. If you do go with that offset, do NOT get 7.5 inch width. You'll just narrow the gap even more.

It's a roll of the dice and also depends on the tire widht you want.

I don't advise against it, but maybe you could do better.

Hey no harm in getting some reassurance! I don't believe there's been that much extensive info on 17" rims, especially regarding the width (ie x7, x7.5 and x8). Especially when the guy at the tire shop said that it may not rub, they're willing to try it out and I won't have to take it if it rubs, but I don't really want them to go through all that trouble if it's guaranteed not to fit.

By the way, I'm getting 225/45/17 Kumho Ecsta Supra 712's.

Screw them. The best way to see if something will fit is to put it on and check. That is the toughtse part. If they are willing to do it, let them.

Thing is, most 17 inch 1-piece rims come in a +40 maximum so they will tell you anything to make the sale. Tell them to put their money where their mouth is.
