Well, I have to say that I've had the privilege to have known a very, VERY good Japanese chef...really truly a relic from Japan's sushi-chef traditions...Although, he did tell me he started out as a gang member in Tokyo and got his beat by his Mom who told him to shape up...
So, he decided to become a chef.
Anyhow, he educated me on how to eat sushi and sashimi properly and told me some great stories of how he started off dish-washing and then the years spent trying to master cooking rice.
And of course, all the no-nos and face-palm moments when he would quietly whisper to me what he saw the customers doing to his creations.

My bro ate one a couple months ago.. burned him so bad it gave him an ulcer on his tongue.
Wasabi. Personally, I'm not sure why people even put gallons of it on their sushi/sashimi.
If you're at a reputable restaurant with an experienced (Japanese) chef, you do NOT need ANY wasabi on your sushi. It's already in there.
With sashimi, generally speaking, a small amount on TOP of the fish...dip LIGHTLY in a bit of soy...
My pet peeve is watching people dump a giant-scoop of wasabi into soy sauce and then, when time to eat the sushi/sashimi, they drown the poor thing in that. How the eff can you taste the beautiful ingredients or the fish?
Dafuq.

Yumcha.. I've been to some decent spots that don't put wasabi under the fish.. I asked why, they said because dumb gwairos don't like it. I'm like..

Asian food was sweet and sour pork. Chicken balls with flied lice. You get the picture.
Soooooo...pretty easy to do the food pranks. The best was making the entire table blanch when I took them to dimsum and ordered tripe, chicken feet, and pork intestines. Good times.

I don't think you could even handle a TX jalapeno.
My bro ate one a couple months ago.. burned him so bad it gave him an ulcer on his tongue.
My pet peeve is when they dip it rice first.. You stooopid fook! And yes.. mix all the wasabi in shoyu.. WTF?!? I even see gwairos dipping the ginger into that mess and eating it.

Generally, you are given a small amount (then, there are those who ask for the entire boxful) and you may take a slice or two of gari before you try a different fish/sushi.
What gets me are those who take their sushi or sashimi...wrap the gari around it or on top of the item...and then, drown it all in a POOL of soy sauce concentrated with wasabi.

I wish. I can say I have a pretty decent sushi palette but I'm not going to pretend to be "expert" enough to be able to eat Jiro Ono's masterwork...as much as I worship his craft and all.
We tried some high-end Japanese restaurants when we visited Japan which were not in the same price-grade as Sukiyabashi Jiro but let's be honest, these "lower tier" restaurants were already amazing...I can't imagine if I could tell the difference.
I mean, I suppose there is going to be a difference...but, not for the $300 hike that I need to pay for it.
His son's establishment in Roppongi is however, on our list. It's nearly not as expensive and well, he trained under his dad, the master...

So many great places in nipponlandizzle.. btw.. there's another doc talking about Jiro's spot. Getting a res is almost a year.. something crazy. Anyways there's a slew of rich entitled Chinese fuckers that have their people make reservations who broker with reservations that are already in the books. Anyways, some of these entitled fucks asked Jiro to cook the fish, or prepare it another way, add mayo and all this other bullshit. His son eventually kicks them out. FFS. Young rich entitled fucks are the worst. I want to cane all of them and break the bamboo off in their ass.

To even make that sort of request to a true master's work is appalling. And honestly, to be thrown out of the restaurant like that? Disgraceful. No wonder Mainland- continue to make a horridly bad name for themselves and their image around the world.
Wealth does not equate to class and sophistication, you f*cking idiots.

I hate pretentious entitled fucks. I've been to a few Michelin starred places. Even as a lowly college student, and each place treated me and other customers like royalty, regardless. They know people visit from everywhere to eat their good food, not just upper class who can afford to casually eat at high end places. To be kicked out, I'd imagine you'd have to be reprehensible.

They hardly worked for it.
Sigh.

I hate spoiled fucks no matter where they're from. Nothing in life is easy...not sure why people don't pass that on to their children when THEY had to struggle to get where they're at.
There's a fine line between that, and wanting "better" for your kids...a struggle builds character.
My butthole is off limits. To the real world...AZ has all access pass.
