Hey everybody!
My wife is getting on my nerves to go get the car's paint protected and rustproofed and interior protected from Ziebarts.
I live in the Chicago burbs, so with salt/winter around here it might not be a bad thing to do??? I keep cars 6+ years.
Looking for opinions here...

Hey neighbor! I'd say save your money. I had a dealer admit to me once that as long as you keep your car washed and waxed, there is no benefit to the paint protection.
As for undercoating, I used to be an avid believe in aftermarket rustproofing, but I'm beginning to reconsider. I have seen cars that have been undercoated develop rust as much as an untreated car. The galvanized body panels on today's cars are probably going to offer you about as good of protection as your going to get. The key is to not let the salt and crud sit on you car. Most important is when washing your car, make sure you spray around inside the wheel wells to loosen and rinse off all that crud. If you don't do this, the crud will build up there and trap water which will promote the corrosion. During the winter months, it's almost MORE important to rinse off the underneath of your car than it is to wash the surface. You'll notice that Honda products tend to rust around the rear wheel wells, so make sure you focus on keeping those areas clean.
My last car ('93 Vigor) was beginning to develop a little rust around the rear wheel wells after eight years, other than that, the paint looked great. As a matter of fact, about six months before I traded it in, someone asked me if it was a new car.
I'd say save our money. Invest in a good polish and wax and focus your attention underneath.
