Well, being another Canadian and able to appreciate the harshness of our salty roads, I would say that if you are planning on keeping it for 10+ years, rust proofing wouldn't be a bad idea. Cars are being better built these days than the 70's and 80's as far as rust is concerned but there is no question that for that length of time of ownership, rust proofing will have some positive effect. Just keep your expectations in check in that it will not prevent all the rust and regular care and maintenance of the vehicle is also expected.

I wasn't aware that they had to drill holes?! I thought they were just using the holes that are the bottom of the doors already....if that is not the case, I know I wouldn't get it done as I would not want anyone drilling holes either.

As far as I know, they use the existing holes but if they need access to something that doesn't have one currently, they make their own and then plug it - I think it's just on the inside of the door frames, but still.

One thing to be careful of is that those holes are drain holes and are needed to let water drain from inside the door. Clog those holes and you will not have rust _proofing_ you will have rust _making_. But I'm sure if they are competent they will know this. With just about all cars getting dipped in electrically bonded rust proofing, I think the parts you need to worry most about are places where the paint/primer gets dinged. And the underside of the car. But I haven't lived in a winter environment in years (thankfully!) and don't have much worry about rust. I did live near the beach for 4 years and got salt spray on my car nearly every day and had no problems at all with rust.
