rim size help please
will 18x7.5 (+37 +43 +48) fit on our cars?... which offset is right for me.. (lowered) and what series tires should i get.. i want thinner looking tires.. but i do not want it to rub since my car is lowered.. any help is appreciated

volk racing gtp 18x7.5
or velox VX-5 19x7.5
Personally i like the silver or diamond cut look... but are there any other rims which are similar that any of you may reccomend??

Yep....
A member had some custom 17x7.5" wheels made by HRE and they recommended +52 offset (they are custom wheels, so they recommend the "optimum" offset).
The closer you get to +52 in the 7.5" width the better (+48)

I like Toyos and S-03s for 3-season performance... IMO -- The Toyo T1S has the only acceptable load rating in a 225/40-18 (88 is too low, and most of the other brands you will find on TireRack will have the 88 rating in that tire)
If you move to non-XL rated tires, you can look at 225/45-18 (minimal rubbing issues) or check out the 235/40-18 tires (more rubber on the road, but potential for rubbing if you get a "wide" tire and lower the car a bunch). (The S-03s are relatively "wide"/"fat" tires!)
As a note -- there is a poor member who is removing his Toyo 235/45-17s on SSR Competition 17x8" +48 wheels for 225/45-17 Toyos (he has Comptech springs with Koni shocks and he has not had an easy time of it). He was having serious rub problems with that combo (where others without the Konis where fine -- go figure...)
Ooops -- I checked and the Nitto-555 in a 225/40-18 supports a 92 load rating

I've got 18 x 7.5 wheels with 42 offset and Eibach springs.
Running 225 40 18 rubber on them.
Did get some rubbing in the back and had to roll part of the fender lip to stop it. Wasn't a big deal, but had to be done.

They are great tires -- do watch the 130 MPH runs with 4-people in the desert (with the 88 SL load rating they have)...
