Question regarding coilovers, camber kit and alignment

Question regarding coilovers, camber kit and alignment
My first question is if I buy coilovers, (lets say Tein Basic's) would I be able to adjust the ride height back to stock height for Canadian winters?
Next question, with coilovers an alignment with a rear camber kit seems necessary. If coilovers are adjustable to stock ride height (or even up an inch +/-) what will be the effects on my car's handling 'attitude' since it was aligned at a lowered (summer) height and then raised for winter driving?
