18x8 +40 offset, will I rub?

If you plan to run an 18x8rim I would go no more offset then +45mm, however you may even want to limit the rim to 7.5" wide in this case.
I had to downsize to a +46mm offset rim on my Accord with a 7" wide rim on 225 tires, I now finally no longer rub, ever.

Im running 17x8's with a 43 offset, so Id agree with the above advice,

yes, but as long as hes running the proper tire size, there shouldn't be a difference in the overall diameter between 17x8's and 18x8's, Im also lowered almost 3 inches, with no rubbing

Actually, i've been thinking about this, I'd say you probably could run a 225 width tire on your rim, and manage to make it without rubbing, wheels will poke out of the fenders though.
