how much 50/50 for my 3.0??

how much 50/50 for my 3.0??
This is what i did.
I did a tranny drain fill and installed a Hayden tranny cooler/ a new radiator/ thermostat/gasket/and flushed the block out with a hose. I put 1 gallon of 50/50 and that seemed to fill her up so i let it run for about 15 mins let it cool and checked again still full. So i took it out on the highway and opened her up to about 90MPH came back and checked still full? I thought i takes 2 gallons to fill her up? It never overheated i kept my eyes on the temp gauge like a hawk and it was normal the whole time? I also put my hand on the block after i got back from the highway and it seemed pretty hot. What do you guys think? I this normal? Am i just paranoid?
What do you guys think?
Is there any thing else i can do?
Is the thermostat opening up?
