Grill Masters *check in*

Summer for us in Northern States is all about grilling in the summer. Also, been known to use it once in a while in the middle of winter.
A couple of fresh brats and some left over hot dogs. Can of beans on the hot side (don't forget to stir the beans).

Love me some kabobs on the grill. Some of my favorites are making wings, all sorts of vegatables (grilled zucchini and squash, asparagus, thick marinated onion slices, sweet potato wedges), swordfish, salmon, and marinated chicken.

Grilling some cheese steak sausages with peppers and onions tonight if the weather stays nice.

Tried cheese steak sausages last year (were very good). I am personally a fan of Jalapeno and Cheddar Brats. The jalapeno still has a little heat after grilling (not as spicy) and the flavor really pops.

I love anything with Jalapeno in it. These are probably my favorite sausages I have found. They hit you with a sweet flavor followed by a little heat.

Made the gf dinner on the grill last night, she was very impressed with the grilled veggies. I chopped up red onion, red pepper, garlic, baby bellas, yellow squash and zucchini, and marinated them in some balsamic dressing, and then cooked them on the grill

Make up for crappy winter by cooking outside as much as possible in summer.

Made some shrimp foil packets (click here for recipe) for July 4th. They turned out awesome and even my picky wife loved them. Next time I'm going to cut the potatoes smaller (or boil them first) because they weren't quite as soft as I would've liked. As you can see I didn't use red potatoes but instead chose a mixture.

Those look awesome, I always love doing foil packs when I go camping. Definitely will have to try some on the grill!

Got a pair of these that after the previous grill tongs with a wooden handle fell apart. They lock and IMO better than any I have used.

^ I have a set of three of those in different lengths. If you are a Costco member, find the Costco business center and go there. They are basically a restaurant supply store with awesome prices. TONS of all the utensils, knives, platters, mixing bowls, etc. you could ever need for not a ton of dough.

Don't forget you can easily microwave potatoes to cook them too (before the grill). That's what I have been doing for potato salad lately after I found that boiling them was making the result more mushy than I wanted.

I've heard a lot of good things about Costco. Check out also etundra, an on line restaurant store out of CO. Bought a bunch of stuff from them over the years, including a Mercer chefs knife that I am pretty fond of.

Made marinated grilled swordfish steaks on the grill last night, I couldn't find a marinade recipe that I liked so I combined a number of them and made my own.

Great flavor, the rosemary and fresh basil really popped, mixed with white wine, fresh lime juice and a number of spices. Definitely will make again

My favorite two home made chicken marinades for the grill.
Add alot of flavor and easy to make

1) lime juice
2) Canola oil
3) McCormick Caribbean Jerk seasoning
Put in a plastic bag with boneless/skinless chicken breasts, you can vary the quantities, but let is marinade for 1-3 days.

1) Balsamic vinegar
2) olive oil
3) Trader Joe's 21 seasoning
Put in a plastic bag with boneless/skinless chicken breasts, you can vary the quantities, but let is marinade for 1-3 days.








Top is the Jerk Chicken, bottom is the Italian (vinegar/olive oil/21 seasoning)

No the jerk marinade was on the grill on the same burners and time as the Italian mariade.
I think it gets blackened since the lime juice already started to cook the chicken while being in the marinade for a few days (sorta like ceviche) .

Made Ranch Turkey burgers with garlic and herb cheese and topped with my home grown and pickled banana peppers (see pickling thread) They were so good and juicy that I didn't need any condiments at all. The meat was so good that I ate a patty plain after the burger, so good!

I love making turkey burgers for that very reason. They always seem to stay very juicy. You have to almost try to over cook them it seems.

No, I bought those at a local farm, I never was able to get mine to grow big enough to be stuffed. All my banana and wax peppers have been pickled by me though

Made some grilled boneless chicken breast tonights marinaded in a sweet black pepper marinade. I am always trying different marinades and this new one is from Stubb's. First time I had seen it at the store and bought a couple different they had. Here is the one I used tonight. Sweet Black Pepper Anytime Sauce | Stubb's BBQ The flavor was really good. I also made grilled red skin potatos that were seasoned with black pepper, salt, and garlic. This was the first time I made them on the grill. Normally we make them in the oven but we were making broccoli in the oven.

Spent my first Christmas away from home this year in my entire life. My girlfriends birthday is on Christmas so since it was just the two of us I gave her the option to pick what she wanted for a meal rather than make a typical Christmas dinner meal I have always had for Christmas with my family. She wanted shrimp, grilled onions, and loaded baked potato. I wanted a little more than that so go myself a 12oz filet. Made 4lbs of shrimp so we could use the left overs for a second meal the following day. The shrimp were done in a jamaican jerk marinade and the onions were glazed in a tangy bbq sauce. The filet was just seasoned with a little pepper while it sat out and then while cooking I put a pinch of salt on it.

The results.

Awesome. I'm jealous that you're able to grill outside. My grill is under a few inches of snow and the highs are in the low 20's so I've been using the cast iron pan instead.
